Avocado Toasties

I have been seeing pictures upon pictures of avocado on toast for months on Pinterest. And each time I saw one, my mouth would automatically start dripping with drool. I figured there probably wasn’t too much to it, so I went ahead and picked up some of that prickly fruit, my favourite AMAZING flaxseed rye bread, and, well, everything else I had in my fridge so…..

Anyways, here’s what happened!!


Avocado Toasties

Serves 1


  • 2 slices Dimpflmeier Flaxseed Rye Bread – or whatever your favourite is
  • 6, 1/4 – 1/2in thick slices fresh mozzarella
  • 1 avocado, cut in half, pit removed, thinly sliced on a diagonal
  • 1/4 cup cilantro leaves, or less (I like cilantro though)
  • 1 lime
  • Coarse salt and freshly ground black pepper



Preheat oven to a low broil. You just want the heat coming from the top. Or you can do this in a toaster oven. Up to you.

Place 3 slices of mozzarella on each slice of bread, and toast in the oven until the cheese is melted and bubbly, approx. 3 – 5 minutes.

In the meantime, prepare the rest of your ingredients.

Remove the toast from the oven, and lay half an avocado on each slice. Top with cilantro, a squeeze of lime juice, and a sprinkling of coarse salt and freshly cracked black pepper.


Enjoy warm, crispy, ooey gooey and delicious!
