Baked Beans with Ham

The Pig. Possibly the most incredible creature roaming this planet. And the most delicious. The beautiful flavour this beast has to offer is incomparable. My Baked Beans would be nothing without the salty, briny, smokiness imparted by my good friend, the Pig.

Baked Beans with Ham

Serves 4

Ingredients;

  • 1 Tbsp EVOO
  • 2 cans black beans, drained and rinsed
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups uncooked ham, trimmed and diced
  • 1 cup low sodium chicken stock
  • 1 tsp ground cumin
  • 1/2 tsp garlic chili paste (or your favourite hot sauce)
  • Freshly ground black pepper
  • 1/2 avocado, diced
  • 3 green onions, chopped
  • 1/2 cup parsley, chopped
  • 0% M.F. Greek yoghurt
  • Salsa

Method;

Preheat oven to 375F.

In a large skillet with a tight fitting lid, heat olive oil on medium high heat. Toss in onions and garlic, and let soften for 3 – 4 minutes.  Add in pork, and let the brown for about 5 minutes.

Add in cumin and hot sauce, and saute for a minute or two. Deglaze the pan with chicken stock, cover with the lid and bake for 35 minutes. Remove from the oven, and take the lid off and bake for another 20 minutes.

Tops with avocado, yoghurt, salsa, parsley and green onions!
