As most of you know, it is one of my life missions to find the best no-churn ice cream or frozen yoghurt alternative. And this one, is pretty dang good.
Also, what better way than to use the forgotten about blueberries you froze over the summer!? No? Was that just me? …… 🙂
Blueberry Frozen Yoghurt
- 4 cups frozen blueberries
- 3/4 cup plain yoghurt (any type will do, I used full-fat)
- 1 Tbsp fresh lemon juice (1/2 a lemon)
- 3 Tbsp honey
Add all ingredients to the bowl of a food processor. Process until super creamy, approximately 5 minutes – depending on the quality of your food processor.
Serve immediately for a soft serve consistency, and / or transfer it to an airtight container and store in the freezer for up to a month.
*When you remove it from the freezer be sure to do so 10 minutes prior to serving it. It lacks the stabilizers found in most frozen yoghurts and will therefore freeze solid.*
