Easy Broccoli Mash

This may not look as pretty as some of my other dishes, but you really cannot beat a quick, easy, and veggie-packed mash.

The problem with mashed potatoes, even though we all love them, is that there really isn’t any nutrients involved at all. To truly make them truly worth it, about a pound of butter and cream is the way to go – and we all know how that makes our a** look.

Tossing some broccoli, and peas if you’re so inclined to, will boost your veggie intake, and limit those calories.

Easy Broccoli Mash

Serves 4

Ingredients;

  • 3 russet potatoes, peeled and cubed*
  • 1 head broccoli, roughly cut into florets
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp skim milk
  • Coarse salt & freshly ground pepper – more than you think you need, potatoes need it!
  • 1/4 cup pine nuts, toasted
  • 1 cup peas (fresh or frozen), optional

Method;

Boil the potatoes in a pot of salted water for approximately 20 minutes – or until they are soft enough to mash. Toss in your peas, if using, for the last 5 minutes.

In a food processor, blitz up the broccoli, until it resembled a rice consistency – but with a few larger pieces here and there. When the potatoes (and peas) are done, drain and add to the food processor with the broccoli. Pulse until the potatoes are mashed with the broccoli (and peas). Transfer to a large bowl, and mix in EVOO, milk, and a generous pinch of both salt and pepper. Taste, and season a bit more if needed – remember potatoes are flavourless, and we need to add salt to bring out the lack of flavour they have.

I like to top this with some toasted pine nuts, but a little added crunch and nuttiness. Just remember to remove them from the pan AS SOON AS you see them turning golden brown. If you leave them in there, they WILL burn. And FAST.

*Yukon Gold (or waxy) potatoes are really the best for mashing, but I did not have any so sue me. If you have gold (or waxy) potatoes use them – you will obtain the best consistency for mashing.
