Pecan Pralines

I cannot take credit for this one. I must give it to the man who will one day make me supremely overweight – but extremely happy. These Pecan Praline’s are super easy and will absolutely wow the crowd. Don’t hog them to yourself though – share the wealth and that waistline will be kept in check. 🙂

Pecan Pralines

Yield: 20


  • 1 1/2 cups pecans, toasted
  • 1 1/2 cups granulated sugar
  • 3/4 cup brown sugar
  • 3/8 cup butter
  • 1/2 cup milk
  • 1 tsp vanilla extract


Line a baking sheet with aluminum foil/parchment paper/lightly coat with oil.

In a large heavy bottom saucepan, over medium heat, combine pecans, sugar, butter, brown sugar, milk, and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball, that flattens when removed from the water and placed on a flat surface.

Drop by spoonfuls onto prepared baking sheet, and let cool completely. FullSizeRender (43)

Eat in a cookie fashion, take a hammer to them, or blitz them up in a food processor and sprinkle on you favourite vanilla ice cream.
