In preparation for Cinco de Mayo, I thought it would be appropriate to pass on a delicious margarita recipe! This Spicy Watermelon Margarita packs a powerful but refreshing punch, and would be perfect to accompany any sort of grilled protein taco! I’m gearing up for some grilled prawn tacos to serve on Thursday, but there are plenty of options to choose from, including these Baked Fish Tacos. Happy Monday to you all! Spicy Watermelon Margarita
- 4 cups watermelon chunks
- 1/2 cup fresh strawberries (optional – only used because the watermelon wasn’t as sweet)
- 1/2 oz. pickled jalapeño juice**
- 4 oz. tequila reposado (preferably El Jimador)
- Spicy salted rimmer – a mix of celery salt, sea salt, and cumin
- 2 limes, 1 juiced, one cut into wedges
- A few slices pickled jalapeños, garnish
Grab a few tumblers, and prepare the glass by dipping the lip in lime juice, and then into the spicy salted rimmer. Set aside.
In a Magic Bullet, blitz up the watermelon and strawberries, until liquefied. Add in the jalapeño juice, and blitz once more. Add the mixture to a cocktail shaker. Then add in the tequila, and the juice of one lime. Add in some ice, and place the lid on tightly. Shake vigorously for 30 – 45 seconds. Place some ice in the prepared glass, and pour the margarita over the ice. Finish with a wedge of lime and a few slices of pickled jalapeño.
Sip and enjoy!
**If you’re a little wary of the spice level, omit the jalapeño juice. Mix the cocktail without, and then sip. If you still want to add a little more spice, you can add a 1/2 tsp to each glass after market. 🙂
