Hey y’all! It’s Monday. And It’s beautiful. And my weekend was perfect. Entirely too relaxing but exactly what we needed to pull through the last bouts of jet leg. Unfortunately, I have a sick man at home, but at least I’m able to power up with vitamins and attempt to side-step this one.
I made this recipe last night – what an awesome easy Sunday meal. My inspiration came from one of the best food blogs out there, Half Baked Harvest. Put a little salad on the side, or make it even more simple, and just have the toast. It is plenty filling.
Apple & Gouda Toast with Sea Salt & Honey
- 4 slices whole-grain honey & oat bread (I love Birds and the Bees from A Bread Affair)
- 1 gala apple, cored, sliced thin
- 4 – 6 slices gouda, thin (or 2 cups shredded)
- 4 Tbsp smooth Dijon mustard
- 6 – 8 leaves fresh sage, some ripped, some whole
- organic honey, for drizzling
- sea salt, for sprinkling
Preheat oven to 425F.
Line a cookie sheet with parchment paper. Lay out 4 slices of bread. Smear Dijon on the face-up side of each slice of bread. Top with a few ripped pieces of fresh sage. Place gouda on top. Sprinkle with sea salt, then arrange apple on top.
Place in oven for 10 – 12 minutes, or until the cheese is bubbly and brown. Finish with another sprinkle of sea salt, a drizzle of honey, and some fresh sage.
I cannot think of anything better to kick-off a beautiful autumn week! Apples, honey, sage. To me, those are all Fall words! 🙂
