It’s probably once in a blue moon that I get a craving for a sweet breakfast, so when I do, I go all out. This is one that will definitely get the nod of approval from all that strive to recreate it. It’s delicious. Perfectly warming on a chilly Fall morning, and a pleasant pairing with a hot cup of coffee. Be sure to put this on your Sunday morning line-up – your kids and your partner will thank you for it.
Nutella French Toast
- 4 slices whole-grain honey & oat bread (I love Birds and the Bees from A Bread Affair)
- 2 eggs, refrigerated
- 1 cup skim milk
- 1/2 tsp pure Mexican vanilla
- 1 heaping Tbsp nutella (heated in the microwave for 30 seconds to soften)
- 1 pinch sea salt
- 1 Tbsp butter
In a large bowl, whisk together eggs, vanilla, and nutella – until combined. Add in the milk, and a pinch of sea salt.
Heat a non-stick grill or griddle pan on high heat. Add in the butter. When the pan is hot, turn it down to medium, so you don’t burn the butter. Submerse a slice of bread in the egg mixture, until thoroughly coated. Place in the hot butter. Let fry for a couple of minutes on one-side until golden brown and crispy. Flip, and do the same on the other side.
Remove from the pan and top with Vanilla Caramel Apples, and a drizzle of your favourite maple syrup.
Vanilla Caramel Apples
- 1 large gala apple, diced
- 1 tsp pure Mexican vanilla
- 1 – 2 Tbsp golden brown sugar
- 1 – 2 Tbsp butter
- 1 pinch flaky sea salt
Heat a frying pan on medium-high, and add in a pat (1 Tbsp) of butter. When melted, add in the apple. Top with a couple Tbsp of brown sugar, and vanilla. Cook for a couple minutes until a caramel develops. Add in a final pat of butter, and a pinch of flaky sea salt.
Serve hot over top of pancakes, waffles, or Nutella French Toast. Yum!
