Did I mention that I was slightly obsessed with taking plain vanilla ice cream and making it my own? I’ve done it twice now, here was the first, and feel as though the sky is the limit! I’m now planning my move for next weekend!
Hot Cocoa Ice Cream
- A pint and a half of vanilla ice cream, softened
- 1/4 cup hot cocoa mix
- 1/2 cup mini marshmallows, plus some for garnish
In a stand-mixer with the paddle attachment, dump in vanilla ice cream. Add in hot cocoa mix and blend until combined. Add in marshmallows and blend until just incorporated. Transfer to a non-reactive glass container with a tight-fitting lid. Cover and freeze.
Remove from freezer a few minutes before serving to soften a little. Top with extra marshmallows and a few whipped shortbread cookies – recipe to come. 🙂
