And here I am, sick as a puppy, craving ice cream – as you do when you have a sore throat but have shouldn’t because of the lactose…. well I say, meh, if it’s the only thing I can eat then, so be it!
But what better than simple ice cream from the store, than simple ice cream from the store (that you made your own).
Note: I did not say “homemade ice cream” 😉
I do not have an ice cream maker, and probably a good thing for my derriere. If you do – definitely make your own vanilla ice cream base, and then add in the ingredients listed in the recipe to make this version!
Peppermint Chocolate Chunk Ice Cream
Makes 1 1/2 pint
- 1 1/2 pints vanilla ice cream
- 15 mini candy canes, crushed (or 1/4 – 1/2 cup crushed peppermint candies)
- 1 cup milk or dark chocolate chunks
Remove ice cream from the freezer for approx. 10 – 15 minutes – you want it to soften substantially. (I typically purchase the ice cream from the store, transport it home, and make this recipe immediately).
Dump the ice cream into a stand-mixer with the paddle attachment, or large stainless steel bowl. Add in crushed candy cane and mix on low until just combined. Taste and assess the peppermint flavour – add in more if necessary. Then toss in the chocolate chunks, and mix on low until just combined. Remove from the bowl into a non-reactive glass storing container with a tight-fitting lid. Place in the freezer for a couple hours before serving. This can be made well in advance, if you have enough will-power not to dive in too much beforehand, just remember to take it out of the freezer a couple minutes before serving to make it easier to scoop.
