Recipe | Baked Espelette-Spiced Yam Fries

This is what happens when my guy has a catering gig… Notebooks and lists take over the apartment, in a organized chaos, and It’s FANTASTIC. He works while I get to create recipes for you guys! Oh, ya, and I also get to make little snacks for him to munch on while preparing dinner. Like these Baked Espelette*-Spiced Yam Fries! Crispy, crunchy, spicy… delicious! 🙂

*If you don’t have Piments d’Espelette – a dried red pepper powder from the Basque region of France – first of all, you should get some… a little goes a long way, and it’s perfect for that subtle spice that creeps up on you a little, but secondly you can substitute with cayenne.

Baked Espelette-Spiced Yam Fries

Serves 2 (you’ll have a tough time sharing these…)


  • 2 medium-sized orange-fleshed yams, peel on, cut into 1/2- to 1-in matchsticks/French fry shape
  • 1 1/2 tsp coarse kosher salt
  • 1 tsp freshly cracked black pepper
  • 1/4 tsp Espelette, or more depending on your heat tolerance
  • 2 Tbsp extra virgin olive oil 
  • 1 handful flat leaf parsley, finely chopped**


Preheat oven to 425F. Line 2 baking sheets with parchment paper.

Toss cut yams in a large bowl with EVOO, salt, pepper, and espelette. Coat evenly. 

Lay onto parchment paper, spaced out, in a single layer. Bake in oven 12-15 minutes, flip the yams with tongs, rotate the pans in the oven, and bake for another 12-15 minutes. 

**Toss in parsley, if you’re feeling fancy**, and serve with your favourite dipping sauce. The one in the photos is mayo, ketchup, and Dijon – I know… REAL fancy.

Sometimes you just need to treat yo-self, and these guys really are the best to do that with. They’re baked. YES! They’re yams. DOUBLE YES! But most importantly, they’re FRIES!! 🙂
