Believe it or not, I love Avocado Toast. I know, so weird right? I mean, I’m actually an anomaly, I’m sure. Ok, ok, but seriously if you’ve been hiding under a rock for the past couple of years, and haven’t had Avocado Toast yet, you should have THIS Avocado Toast. It just takes the norm, and make it a little more jazzed.
*Just an FYI, there are no photos of a baked product, because I simply couldn’t wait. It was just too good! Now, if you’re like my boyfriend and hate warm avocado, just eat it with sliced cheese on top. Why the heck not? He did, and he loved it. 🙂
Avocado Toast Melts
- A couple slices rustic country bread – ours was homemade, but any crusty bread will do
- 1 avocado, thinly sliced
- 2 cups skim-milk mozzarella
- Basil pesto, homemade or store-bought, optional
- 1 garlic clove, halved
- Coarse salt and freshly cracked black pepper
Place the oven on Broil.
Toss the slices of bread on a baking sheet lined with aluminum foil or parchment paper, and place in the oven to toast. Flip half way through to evenly distribute the toastiness. Remove the toast from the oven and rub the garlic, cut-side-down, onto the bread. It’ll lightly perfume the toast with garlic.
Arrange avocado slices on the toast, and top with cheese. Place back in the oven to melt and become bubbly and golden brown – be careful to keep an eye on this – the broiler is REALLY hot. 🙂
Sprinkle with a little coarse salt, freshly cracked black pepper, and homemade pesto, if using. Serve with a yummy salad.
