RECIPE | BLT Salad

OK, it’s a far stretch to call this a “salad” but, it makes me feel better to know that I can eat bacon and still trick my brain into thinking it’s eating healthy… that makes sense, right? In all seriousness though, this recipe is as simple as taking the bread out of the equation. I mean, why is it there anyways? It’s not like it’s mentioned in the name at all… 

I could eat this salad all day, every day…. 

BLT Salad

Yield: I ate that entire bowl to myself….. so, really, it’s hard to say. 

Ingredients

  • 5 or 6 rashes good quality smokey bacon, baked, chopped into bite-size pieces
  • 1 cup tomatoes, chopped into bite-size pieces
  • 2 cups baby spinach
  • 2 cups romaine lettuce, chopped
  • A drizzle of your favourite vinaigrette *

Roast the bacon in a 425F oven for 15 minutes or so – just before it becomes crispy – unless you like crispy bacon, in which case, get your bacon crispy… Chop it into bite-size pieces. Combine all ingredients in a salad bowl. Drizzle over your favourite vinaigrette, toss, and eat directly out of the salad bowl. 😉

*The vinaigrette used in the photos is equal parts acid and olive oil – lemon juice and apple cider vinegar make up the acid component in this case – a clove of garlic, a heaping spoon of Dijon mustard, salt and pepper. Blitzed up with a hand blender to emulsify. It’s our go-to. 

This may just be dinner tonight…. again. And I’m not going to apologize for it…. 🙂
